FERMENTATION/MATURATION
Grapes were destemmed and lightly crushed together. They were given 3 days cold soak and allowed to naturally ferment slowly at quite a cool temperature for further 3 days.
They were then pressed off and only the very light pressings were added back before being fermented to dryness

TASTING NOTES
COLOUR - Medium crimson; very bright and eye catching
NOSE - Lifted fruity but not sweet more savoury almost meaty.
PALATE - Succulent and juicy shiraz. Dry savoury finish.
WINEMAKERS NOTES
Shiraz and merlot grapes treated as though we were making a Pinot Noir. By not having stalks there’s no green flavours just succulent red berry fruit.
Cool fermentation has given soft round tannins that respond kindly to the wine being served slightly chilled.
We have 4 Vineyards situated in the Coonawarra Wine Region, and 1 Vineyard in Kongorong near Mount Gambier. The grapes for Virtue and Julia Hill Wines reds are sourced from the Coonawarra Vineyards, and the Julia Hill and Silex range whites are from our Kongorong Vineyard.
