SummaryGrown in Langhorne Creek, South Australia, this wine shows characters of black cherry and plum. Picked during April 2016 the bunches were fermented whole to encourage lower tannin extraction, stalks were progressively removed during the first day or two of fermentation.
The fruit was plunged twice daily to submerge the cap and gently extract aroma and flavour, towards the end of fermentation the whole bunches were pressed and the wine was aged in French oak barrels to develop complexity.
